Here’s a quick tasty dinner to make that’ll impress the guests (or your own stomach).
Not only is it simple to throw together, it’s healthy too. This dish is oooooh so fresh, flavorful, and im-pasta-bly delicious. So raise your glass of wine to this healthy creation! Though save some of the wine for the dish 🙂
While I made this with gluten free noodles, you can use regular noodles and it’ll be just as good!
Here’s what you’ll need:
- 1lb *Gluten Free pasta
- 1lb of shrimp
- 2 handfuls of spinach
- 1 cup of quartered cherry tomatoes
- 1 cup of white wine
- 6oz goat cheese
- 2tbsp coconut oil
Herbs and seasonings
- 4 cloves of fresh galric (minced)
- 1tbsp of basil
- salt and pepper to taste
* brown rice noodles are my favorite GF noodles to use. I find that they work the best.
Follow the directions for the noodles on the box and start them right away. While the noodles are cooking, melt your oil in a large pan and add the spinach, shrimp, goat cheese, whine, and seasonings. Stir occasionally and let them simmer together for 10 minutes.
When the pasta is al dente, strain it and add the noodles into the pan with the scrumptious concoction. Mix the noodles and the sauce togeather and toss in the fresh tomatoes. Remove it from the heat and serve!
Al dente is an italian word meaning that the pasta is cooked, but still firm to bite. Which means that your pasta should not be mushy or over cooked.
Servings: 4 ……..or 2 very hungry people
